Who are you and what do you do?

I am the Executive Head Chef at The White Horse, Brancaster Staithe. I have worked in the kitchen since 2005, stepping up to Head Chef in 2014, and recently to Executive Head Chef. It’s been a great journey and working in such an amazing establishment is just the icing on the cake. I feel like the luckiest chef on the coast, creating my menus in a kitchen that faces out across the stunning tidal marsh and serving my menu in the conservatory restaurant that overlooks this panoramic view. 

 

What do you like about the North Norfolk Food and Drink Festival?

It is a great opportunity to showcase my style of cooking which is full of Norfolk produce. It is also fabulous to network with other local chefs, and it is lovely to the public and answer their questions.

 

What can we expect from you this year?

I’m passionate about seasonality and the provenance of ingredients, and love exploring all that’s out there, especially on my doorstep in Norfolk, so I will more than likely, do a dish involving local food. I like simplicity in cooking, using the best produce and not mixing up too many flavours so the taste comes through.
